Ian Hemphill, author of “The Spice and Herb Bible” offers these suggestions for checking the pungency of spices: Smell or taste ground spices (careful with the chili powder) when you cook with them to see if they are still fresh. If you are going to pick your own and know the lavender hasn't been sprayed, you should dry it upside down in a dark place for a couple of days to dry it out. I recently purchased this book becasue I am an avid cook and recnetly purchased an herb garden. Sundays at Moosewood Restaurant, by the Moosewood Collective, published by Simon and Schuster, Inc. I'll post a soy free almond sauce recipe I use when I figure out what I put in it. Serve with Thai dipping sauce or peanut sauce. It's based on a modified recipe from the Spice and Herb Bible, one of my favorite reference books.
